INGREDIENTS:

2 & 1/2 lbs thinly sliced beef

1 head macerated garlic

3/4 cup distilled white vinegar

1/4 cup sugar

1 tbsp salt

1 tbsp freshly ground pepper


PREPARATION:

Marinate the meat in the ingredients for at least 12 hours, then sun dry the slices.
These are best served fried.

Spicy Tuna Salad

INGREDIENTS:

4 pcs, medium size cucumber 1cm. cube
2 pcs. medium size carrot cut into thin strips
2 pcs. medium size squash tomato thinly cut for easy to chew
2 pcs. chili pepper(sili labuyo)slised thinly
1 pc. meduim size onion chopped into small pcs.
2 pcs. medim size lemon
1 can tuna in olive oil
salt and pepper to taste
some lettuce for decorations


INSTRUCTIONS:

Drain tuna from the olive oil

Mix all the ingredients on a medium size bowl

Set aside

Arrange the lettuce to another bowl

Pour the mixed ingredients, then serve

***3 to 4 servings and best with fried fish

Spanish Bread



INGREDIENTS:

Bread flour 1.0 kg
Instant Yeast 8 g
Dobrim Nobro 4 g
Monofresh 5 g
Sugar 160 g
Salt 15 g
Water 520 g
Shortening 40 g
Skimmed milk 200 g
All-purpose flour 200 g
Sugar 200 g
Margarine 300 g


PROCEDURE:

1. Blend flour, Instant Yeast, Dobrim Nobro, Monofresh, sugar, salt, and water using a spiral mixer at low speed for 1 minute.

2. Add Bakels Shortening and mix until fully developed.

3. Rest for 10 minutes then cut 50 g pieces and round.

4. Flatten each dough piece into an oval shape and then place prepared filling.

5. Mould into hotdog roll shape.

6. Proof then bake at 180°C.

Flaked Corn and Chicken

PROCEDURE:

2 tbsp. oil
1 tbsp. crushed garlic
1/4 cup sliced onion
300 g. chicken breasts, boiled and flaked
4 pieces MAGGI Tinola Cube, dissolved in
8 cups water
100 g. young corn, sliced diagonally 1" long
pepper to taste
1 cup sili leaves


DIRECTIONS:

Heat oil and sauté garlic and onion until golden.

Add chicken and pour in broth.

Bring to boil then add corn and season with pepper.

Blend well and simmer until corn is crisp tender. Add sili leaves and cook for 2 minutes.

Serve hot.

INGREDIENTS:

1 onion, chopped
1 cup coconut milk
salt and pepper to taste
eggplants


PROCEDURE:
Roast eggplants in oven or over gas flame. Peel and chop fine. Peel onions and slice crosswise very fine. Heat oil in pan, add onions and fry until translucent. Add eggplants, stir for a couple of minutes. Season with salt and pepper. Remove from heat, add coconut cream, let sit several minutes to develop the flavours.

Vegetable Rice



INGREDIENTS:

1/2 tablespoon cooking oil
1/4 cup sliced carrots
1/3 cup green peas
1/8 cup chopped celery stalk
1/2 cup shredded cabbage
3 cups cooked rice
2 tablespoons soy sauce
1 pack 7 grams Ajinomoto Ginisa Flavor Mix
1 pack 2.8 grams Aji-Shio Garlic Plus
1/2 cup diced cucumber


PROCEDURE:

In hot oil, saute carrots, green peas, celery and cabbage.

Add cooked rice, soy sauce and sprinkle Ajinomoto Ginisa Flavor Mix. Mix well and cook until vegetables are tender.

Sprinkle Aji-Shio Garlic Plus and add cucumber. Cook for another minute.

Coffee Cake



YOU WILL NEED :

1 cup granulated sugar
1 cup brown sugar, packed
1 cup butter or margarine
3 cups all-purpose flour
1/2 cup chopped nuts
1 1/2 teaspoons ground cinnamon
1 cup buttermilk
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda


HERE's HOW:

1. Preheat oven to 350*F (175*C). Grease a 13 x 9 x 2-inch baking pan; set aside.

2. Combine the first 6 ingredients until crumbly. Reserve 1 cup of crumb mixture and set aside for topping.

3. To the remaining crumb mixture add the rest of the ingredients from the buttermilk to the baking soda and stir by hand to combine. Mixture will be slightly lumpy.

4. Pour into prepared baking pan. Top with the reserved 1 cup crumb mixture and bake for 25 or 30 minutes or until tested done when wooden pick inserted in center comes out clean. Serve warm.

***Makes 16 servings.

Ginisang Togue

INGREDIENTS:
2 tbsps cooking oil
2 pcs tokwa (hard bean curd), cubed ½ x ½ inch thick
2 tbsps garlic, crushed
1 pc onion, sliced
2 pcs tomatoes, sliced
9 cups togue (mung bean sprout) washed and drained
2 tbsps Mama Sita’s Oyster Sauce
¼ tsp ground black pepper
¼ tsp salt
2 tsps patis (fish sauce)


COOKING INSTRUCTIONS:

1. In a wok, heat oil and fry tokwa until golden on all sides. Dice into ½ x ½ inch cubes and set aside.

2. In the same wok, sauté garlic, onion and tomatoes.

3. As the tomatoes start to wilt, add the tokwa, togue, Mama Sita’s Oyster Sauce, black pepper, salt and patis.

4. Continue cooking over medium heat until bean sprouts are done.

***Makes 6 servings

Pork Barbecue Philippine Style



INGREDIENTS:

1 pound tender pork loin, cubed
1/4 cup soy sauce
5 cloves garlic, minced
2 tablespoons vinegar
2 tablespoons brown sugar
1/4 cup tomato ketchup



COOKING METHOD:

In a bowl, mix soy sauce, garlic, vinegar, brown sugar and ketchup. Add pork cubes and marinate at least overnight. Heat grill until hot. With bamboo skewers, thread pork cubes and place on grill, turning each side until browned and well done.

Sandwich Deluxe



YOU WILL NEED:

2 eggs

4 sliced bread

1 slice ham, finely chopped

2 cups chicken or meat broth

1/3 cup evaporated milk

2 tbsp. butter or margarine

1 tbsp. flour

pinch of pepper

salt to taste


HERE's HOW:

Let boil chicken broth, drop in eggs, separately. When cooked scoop out. Set aside eggs. Melt butter iver medium heat, add flour stir flour dissolves. Add 1 cup broth gradually. Season with salt and pepper. Add chopped ham. On 1 slice bread pour 2 tbsp. creamed sauce, top with another sliced bread, place poached egg on top and cover with cream sauce. Serve hot or cold. Makes two sandwiches.

Ham Rolls



YOU WILL NEED:

1/2 kilo sliced ham
2 tablespoons corn oil
2 teaspoon chopped onions
3/4 cup chopped Vienna sausage
3/4 cup chopped bacon
2 tablespoons pickle relish
2 beaten eggs
3 tablespoons all purpose flour
1/4 cup chopped raisins
1 pack 2.8 grams Aji-Shio Pepper Plus
1 cup brown sugar


HERE's HOW:

In hot oil, saute onions until transparent. Add sausage and bacon.

Turn off the fire, add pickle relish and cook for few minutes.

Add egg, all purpose flour and raisins. Sprinkle AJI-SHIO™ Pepper Plus and mix well.

Fill the slice ham with cooked mixture. Roll and fasten with toothpick. Dredge with brown sugar.

Grill or fry until brown.

***Makes 30 rolls

Banana Cupcake



INGREDIENTS:

1 cup granulated sugar
1/2 cup vegetable shortening
1 large egg
4 tablespoons sour cream
2 medium-sized ripe bananas, mashed
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon vanilla extract


PROCEDURE:

1. Preheat oven to 350*F (175*C).

2. Cream sugar and shortening; add egg and mix well. Add mashed bananas and vanilla and blend.

3. Dissolve soda in sour cream and add alternatively with flour and salt to creamed mixture.

4. Bake for 20 minutes or until tested done when wooden pick inserted in center comes out clean. Cool on wire rack. Frost as desired.

***Makes about 15 cupcakes.
